Tasting Notes:

Another delightful organic decaf. Upfront notes of Shortbread biscuit coated in sweet Milk Chocolate. Finishing with a silky sweet Red Apple acidity. Easy drinking and non offensive. Crowd pleaser incoming! If you're not sure about what decaf to start with this is beautiful in milk, it's a Medium roast but has enough punch to cut through milk superbly.

 

The Coffee:

This decaf Motmot, named after a beautiful local bird found in this specific region of Mexico, Chiapas.

In the state of Chiapas, you will find Mexico's largest and oldest coffee-producing regions, some farms can look back on a historical record of more than a hundred years. With the influence of the Atlantic Ocean on one side and the Pacific Ocean on the other side, the mountain slopes of the Sierra Madre Chiapas cross the region dividing the state and creating various special microclimates.


This coffee is decaffeinated using the Mountain Water Process which involves sourcing natural mountain water from Pico De Orizaba (one of the largest mountains in Mexico).
Since 2003 Mountain water process has been certified as organic (under NOP, EU, JAS, COR and SAGARPA regulations) and certified as well following sustainability trends by RFA, UTZ, FLO, Fair Trade USA, Bird Friendly.

Reliably flavoursome and moreish

While my staple is Colombia Excelso, when I order I sometimes pick a small bag of something to try. The Mexico MotMot, was a great surprise! Full flavoured chocolatey base and very drinkable, with an interesting tangy, astringent finish. I usually start the day sipping a long black, but this also holds up as my late morning espresso.

New Flavour (to us) But The Same Amazing Experience

We had ordered the same two varieties of coffee, a few times. So I decided that it was time to try something new. Especially given that the wide range is part of the appeal of DecafCo!

So, we tried this - the Mexico Motmot Organic - and another.

Haven't tried the other one yet, but this is a VERY BIG score! My partner (the reason we went seeking better quality decaf) absolutely adores both the flavour, and just as important, the aroma of this coffee. As good when you open the bag, as it is when you brew it up and drink it.

Very Satisfied

Once I made the decision to quit caffeine I was in a quandary for something to drink. Decafe Co to the rescue. These beans are great. All the aroma and taste without the caffeine hit. Decaf Co have exceptional service with fast delivery. Highly recommended.

Mountain Water Process is a method of indirect decaffeination. All our MWP decafs come from the Descamex facility, which uses pure water from Pico de Orizaba—the highest mountain in Mexico.

The process begins with a caffeine analysis to determine optimal conditions required, the beans are then steamed and prepared for caffeine removal. The extraction process uses a water-based saturation method and a precise combination of pressure, vacuum, and environmental temperatures in order to extract caffeine while retaining the coffee’s flavor compounds.
