  • Temperature guide
    84 °C – Espresso roast // As an espresso roast is more soluble we reduce the temperature in an effort to not over extract and get bitterness.
    91 °C – Filter roast // Beans are roasted lighter, they're much more dense and the solubility is lower than espresso roast. This means we can increase the temperature in order to extract more of those delicate flavours.

Step-by-Step

  1. Set up inverted
    Place the plunger so the black seal sits just below the “4” mark. Rest the chamber on the plunger.

  2. Add 14 g of coffee
    Medium-coarse grind (looks like table salt). Level the bed for even extraction.

  3. Start the clock & pour 215 g water
    Use 84 °C for espresso roast or 91 °C for filter roast. Fill the 215g of water.

  4. Stir to fully wet the grinds
    Few gentle stirs break up any dry grinds.

  5. Take in the aroma
    At ~45 s, lean in and start smelling those tasting notes on the bag - proof decaf can be dreamy.

  6. Prep your filter
    Rinse a paper filter in the cap, shake off excess water, and lock it onto the chamber.

  7. Second stir at 2:00
    One quick swirl re-suspends fines for sweeter clarity.

  8. Flip & plunge
    Clamp your cup/server on top, invert the setup, and begin pressing at:
    2:30 (espresso roast) or 3:00 (filter roast).

  9. Press steadily for 15–25 s
    Aim for a slow, even hiss at the end - no need to Hulk out for this, just rest your body weight against it.

  10. Enjoy straight or dilute
    Allow it to cool slightly and taste. If you think our recipe is too strong you can always add more hot water. Or if you think it's not strong enough you can use less water at the start. Try reducing down to 200g water and taste.


Tweak It to Taste

Want… Try this
More body Finer grind or 200 g water
Brighter acidity Coarsen grind or test using lower temperatures.
Sweeter cup Try using slightly more grinds.
Make a concentrate This is essentially a whole different article. But try using 20g and reduce the water to 100g. Use higher temperatures of water as well.

FAQ

Why the inverted method?
Keeping the brew sealed eliminates early drip-through, giving fuller extraction and better control over steep time.

Does decaf need different water temps?
Decaf roasts are slightly more soluble. Dropping the temp a couple of degrees for darker espresso roasts preserves sweetness and avoids bitterness.

Paper vs. metal filter?
Paper delivers a cleaner, tea-like cup that lets our Swiss Water beans shine. If you love heavy body and oils, swap in a metal filter and keep everything else the same.
