Unlucky pick

This was my third time ordering from Decaf Co. Loved the beans I chose on previous orders and decided to go with a lucky dip this time. I received Guatemala Finca Los Conejos. They smell absolutely divine but I only drink soy lattes and these beans curdle the milk horribly every time. I've occasionally had this happen with other beans when adding just a splash of soy but never as bad as this. The coffee is undrinkable and unfortunatley I ordered two kilos! While I like the idea of being surprised and possibly trying something different than I would have chosen myself, I wonder if there needs to be a few questions asked to make a better match?
Four stars because the beans do smell wonderful and I'm sure the brew would be awesome but I've taken one star off because I spent $100 on beans I won't use.

How are you brewing this Vikki? You certainly were lucky because this was our most expensive option on the website. I feel like you may have made a mistake, you say you're making a latte but you've actually purchased a Filter roast. So this is intentionally roasted significantly lighter for people brewing pour over or black coffee exclusively, so it's not really meant to be used with milk!
