Representing the pinnacle of the Specialty Coffee scene, we're thrilled to bring you this decaf coffee, which has been carefully processed at the renowned Mountain Water Processing facility in Mexico. Experience the essence of a single estate farm's coffee in it's decaffeinated form!

The Coffee:

La Hammonia comprises 12 distinct lots, with each lot meticulously separated by varietal and unique in its elevation, ranging from 1200 to 1400 meters above sea level (MASL). These shade-grown lots benefit from organic fertilizer produced on the farm, exemplifying La Hammonia's status as a certified organic farm. The cherries are handpicked and promptly transported to the on-site wet mill, where they undergo processing using pure mountain water. Following a 12-hour fermentation in the mucilage and a second wash, the coffee is carefully transferred to covered drying beds. Each lot is harvested individually, meticulously cupped, and then expertly blended, ensuring traceability of lot volumes and consistent cup profiles from season to season. Once the beans have reached optimal dryness, they are transported to the farm's dry mill for further processing and packaging. To foster sustainability, the farm maintains a nursery for new tree planting, with ongoing efforts to replant 50 hectares at a time, as some of the existing trees are over 65 years old. Additionally, La Hammonia explores the cultivation of a new variety known as Marsellaza, an improved Catimor variety, adding to their spirit of innovation and discovery.

Wow, what a great coffee!

It got delivered in the afternoon and wow it was just what I needed at 3pm. You can enjoy a nice warm cup of brew anytime with the awesome offerings from DecafCo. This is the first Mountain Water decaf I've tried and it hasn't disappointed. This won't last long in our household

Nicaragua Selva Negra

I switched to decaf a few months ago to help my sleep patterns. I live here in FNQ where lots of lovely organic coffee is grown but no one does decaf. Shop bought beans I’ve tried have been bitter so I’ve switched to drinking decaf teas.
I saw your FB add and reading reviews thought I’d give it a go. So glad I did. I can now enjoy a coffee anytime of the the day. Delighted new customer. ☕️

Best decaf I’ve ever had

I’ve had a few different varieties from decaf co and this is my fav so far. Super light (I get the filter roast) and fruity. I use it in espresso/flat white in a standard ratio. I also blend it with a caffeinated bean to get a half caf. Really versatile bean. Hope I can continue to get this bean for some time. Also anecdotally I don’t have to grind this bean as fine as some other decaf options, so it ends up being a bit easier to work with. Highly recommended

Mountain Water Process is a method of indirect decaffeination. All our MWP decafs come from the Descamex facility, which uses pure water from Pico de Orizaba—the highest mountain in Mexico.

The process begins with a caffeine analysis to determine optimal conditions required, the beans are then steamed and prepared for caffeine removal. The extraction process uses a water-based saturation method and a precise combination of pressure, vacuum, and environmental temperatures in order to extract caffeine while retaining the coffee’s flavor compounds.
